This is my go-to meal when I am not sure what to make for dinner. It is really easy to put together and you probably already have the ingredients in your refridgerator so no need for an extra trip to the grocery store! That’s always a plus in my book! You can use a pie crust if you are looking for a more hearty meal but I prefer the crustless frittata since you are tasting the eggs, spinach and bacon more without the crust. Yesterday, a friend told me about this great Roasted Garlic Chicken Recipe that her whole family loves and that it is really easy to make.
