    What’s For Dinner? Spinach, Cheese and Bacon Frittata

    April 30, 2015 /

      This is my go-to meal when I am not sure what to make for dinner.  It is really easy to put together and you probably already have the ingredients in your refridgerator so no need for an extra trip to the grocery store!  That’s always a plus in my book!  You can use a pie crust if you are looking for a more hearty meal but I prefer the crustless frittata since you are tasting the eggs, spinach and bacon more without the crust.  But both are great meals for a special day such as Mother’s Day and easy enough for the kids to help out with.  Enjoy!    …

    What’s For Dinner? Lentil, Bacon and Vegetable Soup!

    April 23, 2015 /

        This is one of my favorite soup recipes because really, what’s not to like about lentils, bacon and vegetables?  I am such a fan of lentils I am always on the lookout for a recipe that calls for them.  This soup is really easy and you can sneak in some extra vegetables for the kids!       I picked up a basket of fresh vegetables at our local farm stand and was inspired to make my favorite soup tonight.  If you like lentils and fresh vegetables I promise you will love this soup!  It is great anytime of year and even my picky eater (my husband) likes…

    What’s For Dinner? Roasted Garlic Chicken with Thyme

    March 31, 2015 /

    Yesterday, a friend told me about this great Roasted Garlic Chicken Recipe that her whole family loves and that it is really easy to make.  I am always up for simple and healthy recipes that my family will actually eat.  My husband is not a big meat or seafood eater (yes, makes for interesting dinners) so I have to look for recipes that he might like as well.  My daughter is fairly easy to please as long as it isn’t too spicy.  When I heard what was included in this recipe: chicken, potatoes, garlic, tomatoes, fresh thyme, olive oil, salt and pepper  I was sold.  That is a fairly easy shopping list so…

    7 Delicious St. Patrick’s Day Recipes

    March 8, 2015 /

    St. Patrick’s Day is right up there as one my favorite holidays!  It is just a fun day to celebrate all things Irish and green and since I am mostly Irish and green is my favorite color… you can see where this is going! I absolutely love corned beef and cabbage but no one else in the family will eat it if I make it so this year I am on the hunt for something they might eat.  Here are some fun and tasty ideas to try out!  Though I just might have to make this easy slow-cooker corned beef and cabbage recipe just for me!     Slow Cooker…

    Recipes :: Fall Fun for the Kids

    September 15, 2013 /

    Most of the country is enjoying the fall season and getting geared up for the holidays and some fun!  Here in southern California we have been having heat wave after heat wave but that isn’t deterring me for starting to find some fun recipes I can make with my daughter once it cools down a bit.  I have good memories of making fudge in the kitchen with my mom and like to create some lasting ones with my little monkey! I found some tasty ones that can be enjoyed by the whole family!     Owl Graham Crackers: This fun sweet is from Eyes On the Source and uses graham crackers,…

    Recipes :: Easy Homemade Popsicles

    July 8, 2013 /

      For my daughter’s end of the year kindergarten carnival party I signed up to bring popsicles.  Having my masters in nutrition has helped me to decipher through ingredient lists to see what our family should and shouldn’t eat.  And to be honest, I am always a bit disgusted at the snacks – even the ones who claim to be “healthy” snacks that companies put out on the shelves for our kids.  I grabbed some popsicles that I use to eat as a kid and looked at the ingredient list on my way up to the checkout.  I didn’t like that High Fructose Corn Syrup was listed in the label as…
