Slow-cooker Shredded Chicken Tacos
To celebrate Cinco de Mayo this past weekend we went in search of the easiest taco recipe we could find. We didn’t want to spend too much time in the kitchen when we could hang out by the pool right?! And let me tell you – this is not only the easiest slow-cooker recipe you will find but seriously one of the best! My husband joked that he was doing manual labor by having to scoop out the measuring spoon from the spice jars but seriously if you are in need a meal you can just toss in the crock pot and head out the door, you’ve found a good…

The Perfect Meal :: Warm Salmon Nicoise Salad
One of my favorite meals is a Nicoise salad because it has a great combination of goodies – great sources of protein – canned tuna and eggs, greens, olives and much more! When my husband offered to make me this salmon version I was super excited! In my opinion this is the perfect meal – especially on a warm summer day! The recipe we found on The Wok of Life is really easy and took like 10 minutes to prepare (minus grilling of course) but overall, a very nutritious meal with very little prep work. Enjoy! For the Dressing: (You can also just use a yummy Italian dressing like…

A Real Crowd Pleaser :: Raspberry Cream Cheese Dip
Thank you Breton for sponsoring this post. Make everyday entertaining better with Breton! I don’t know about you but with this ridiculous heat wave we are having in Southern California, the idea of cooking in a hot kitchen does not really sound that appealing! Granted, not everyone’s AC is broken (sigh) but I wanted to create something yummy for the family to enjoy on this hot summer night. We were asked to create a delicious recipe centered around the Breton Artisanal Cranberry and Ancient Grains crackers which, truthfully, taste amazing just by themselves! In fact, when I was preparing this recipe, my daughter came into the kitchen and asked…

Slow Cooker Jambalaya
Our family would love to visit New Orleans someday soon, but in the meantime we decided to bring a little Cajun food into the house! This recipe was found on All Recipes and is super tasty. Plus I love the slow cooker meals because it just takes a little prep time and the slow cooker does the rest. Add in some of your favorite corn muffins and you are set! Enjoy! You Will Need: 1 pound skinless, boneless organic chicken breast halves – cut into 1 inch cubes 1 pound andouille sausage, sliced 1 (28 ounce) can diced tomatoes with juice 1 large onion, chopped 1 cup chopped…

Perfectly Grilled Steak & Lobster Recipe
This week my ever-growing daughter asked to have steak for dinner. It reminded me of the first time she ever had meat – like right off the grill ribs. She was about 4 years old and was at a friends birthday at the zoo. The boy’s father was a chef (lucky kid!) and was grilling up some baby back ribs. I can still remember the look of surprise Kate had while eating these tasty ribs. I think she went back for thirds! To this day, we call her the carnivore because she just loves to eat meat. I try to buy grass-fed, no-hormone steaks because frankly I think they…

Grilled Shrimp with Garlic and Herbs
We have been enjoying quite a few shrimp recipes this summer! Seafood just sounds better during the hot summer months doesn’t it? And shrimp is pretty affordable – especially if you buy it frozen! We (my husband) attempted this new recipe on the grill and it is both in our top 2 favorite shrimp recipes we’ve tried out so far. There is a ton of flavor and super easy to make! We grilled some artichokes as well. First steam them and make sure they are soft enough to eat. The grilling with some spices and a little olive oil just adds some nice flavor. We also grilled some corn.…
