Years ago I had a friend tell me she’d make homemade lasagna all the time using the no boiling lasagna noodles and that it tasted great! Inspired, I ventured to try to make this rather intimidating dish. It was intimidating to me since it seemed so difficult to make but using the no boiling noodles makes all the difference in the world! Since then, we make this dish every once in a while and last night we whipped it up within 20 minutes! Did you know that June is National Fruit & Vegetables Month? I didn’t until recently, and I think June is the perfect time to celebrate fruits and vegetables. Summer yields a delicious variety of fresh produce. Here are some of the fruits and vegetables that are in season now: Fruit: Peaches, Plums, nectarines, cherries, blackberries, strawberries, tomatoes, passion fruit, melon, and apricots.
