Delicious Roasted Garlic Chicken and Brie Sandwich Recipe

 

I wish I could say I came up with this recipe all by myself but this delicious sandwich idea comes from one of my favorite sandwich cafes here in town.  I figured I could use my leftover roasted garlic chicken breast from the night before and with just a few ingredients duplicate it at home.  Friends, it was SO easy to make and goes far on taste.  This is the perfect day after meal if you have leftover chicken or even turkey!  I’m thinking of ways to keep eating turkey after the big meal.

Yummy Roasted Chicken and Brie Sandwich:

What You Need:

Cooked chicken breast (see my recipe for roasted garlic chicken – one dish meal here)

Couple leaves of Romaine Lettuce

Sliced tomatoes

Your favorite Brie Cheese – couple slices

mayonnaise

fresh baguette

 

Instructions:

Warm a sandwich size piece of the baguette in the oven

Place a couple slices of the brie cheese on one side of the baguette

Let heat up for a few minutes around 350 degrees Fahrenheit

Slice the chicken breast into small, bite size pieces

Once the cheese is melted and bread warmed up to your liking, place the chicken on one side of the sandwich

One the other side, spread some mayonnaise and/or olive oil with salt and pepper.

Place a couple lettuce leaves on the mayonnaise side

Add some tomatoes

and viola!  That’s it!  Serve and enjoy!

Here is the one-pan roasted garlic chicken with thyme!  Use your leftover chicken and make these yummy sandwiches.  I prefer white meat so we used chicken breast now.  But either is fine for this recipe.
