Recipe :: Golden Beet & Tomato Salad with Goat Cheese

 

When people ask me about what types of diets I recommend and which side of the fence I fall on, whether I am pro-vegetarian or pro-Paleo diet, I always tell them to listen to their body.  Truly, your body will tell you when a food is working for you or not.  And if you find you are craving a type of food that ends up making you feel sluggish, bloated or just overall bad, it probably means you are allergic to it.  Our bodies, if unbalanced, will crave the very food that we are allergic to.  Go figure!   This is the case when you have a bad reaction to a food, because your body will also tell you when you need certain nutrients.  I remember when I was pregnant with my daughter and about three months into the pregnancy, this former vegetarian of ten years, could not get enough red meat!  And the rarer the better!  Apparently, my body needed the amino acids and soluble iron found in red meat.

 

 

With that being said, one of the foods I find that I always feel better after eating are beets!  And I am loving the golden beets that Melissa’s Produce offers peeled (yay), steamed (yay again) and cubed, ready to add a little something something to your next salad.  I tried the recipe they listed on the back of the package – talk about making our lives easier, and really loved the combination of this beet salad.

 

Packed with essential nutrients, beetroots are a great source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C.

Beetroots and beetroot juice have been associated with numerous health benefits, including improved blood flow, lower blood pressure, and increased exercise performance.  Have you tried mixing some beet juice in with your juice routine?  It is delicious!

Many of the health benefits of beets are due to their high content of inorganic nitrates.

 

Vitamins and Minerals

Beetroots are a great source of many essential vitamins and minerals.

  • Folate (vitamin B9). One of the B vitamins, folate is important for normal tissue growth and cell function. It’s particularly necessary for pregnant women (45).
  • Manganese. An essential trace element, manganese is found in high amounts in whole grains, legumes, fruits, and vegetables.
  • Potassium. A diet high in potassium can lead to reduced blood pressure levels and positive effects on heart health (6).
  • Iron. An essential mineral, iron has many important functions in your body. It’s necessary for the transport of oxygen in red blood cells.
  • Vitamin C. This well-known vitamin is an antioxidant that is important for immune function and skin health (78). (Source: Healthline.com).

 

You Will Need:

Golden Beet & Tomato Salad with Goat Cheese

1 Teaspoon Lemon Juice

2 Tablespoon Olive Oil

Sea Salt and Freshly Ground Pepper, to taste

1 pkg. Melissa’s Golden Beets

1 Tomato, sliced into chunks

1/4 lb Fresh Goat Cheese, cut into chunks

1/3 cup Fresh Parsley, roughly chopped

 

In a bowl, whisk together the first 3 ingredients and set aside.  In another bowl, toss together the rest of the ingredients and gently mix in the vinaigrette.  Makes 2 servings.
