Recipe :: Mini Frittatas make a great on-the-go meal
These cute little mini frittatas are such a great on-the-go meal. I had one on my way to helping out at my daughter’s school this morning and my husband took a couple for lunch today. The kids will love it too especially if you mix in their favorite cheeses!
Spinach, Bacon and Cheese Mini-Frittatas
1/2 cup grated cheddar cheese
1/4 shredded Parmesan cheese
handful of chopped spinach
1/2 cup goats milk
three to four slices of cooked bacon chopped or soy bacon if you want it to be a vegetarian dish.
12 eggs
salt and pepper to taste
Beat eggs together in a separate bowl. Then place all ingredients in a bowl and whip together.
Divide among 12 paper-lined muffin cups. Bake at 375 degrees Fahrenheit until puffed 15 to 20 minutes. Makes 12.
Make a green salad and roast some vegetables – we made a vegetable medley of asparagus, potatoes, sweet potato chunks and some beets. But use your favorite vegetables and mix in some good cold-pressed olive oil, some salt and pepper and put in the oven for 10-20 minutes depending on how hard they are (carrots, potatoes, etc., take longer). You’ll be surprised how tasty this combination is! Enjoy!
